Note: The Argentine Sloped V-Grate allows the grease to drip down the V's into a Drip Pan this limits the flair-ups that you can get when the grease just drips directly onto your embers.

The Adjustable Grate allows you to lower the grate closer to the fire to get that initial sear onto your meat to lock in the flavor then raise the grilling surface so that you can slowly cook your meat to finish the cooking process.
